A couple of weeks ago we managed to find a little space in our busy brew schedule for 20 barrels of a special beer. The chance to brew something new and to do an experiment got the creative juices going. We figured it was a good opportunity to have an experiment so we decided to split the batch into three completely different beers.
The first job was deciding what the base beer for this experiment should be, and after much deliberation a 4% pale ale was chosen. Recently a lot of our special beers, such as Landslide, have used big new world hops so the brewers decided to turn things a bit on their head a bit and use only British hops in this beer.
Our extensive hop store was raided and a blend of Bramling Cross, Pioneer and Phoenix was selected. The beer received a heavy dry hopping of Phoenix on the end to make sure it was packed with great flavour from those all British hops. With so much Phoenix hops going in it seemed logical to call this beer From The Ashes.
Now that we had our base beer we then wanted to have a bit of fun and do something we have never done before, an experiment with different teas. We called our friends at Eteaket Teas in Edinburgh and set up collaboration. After a few discussions, Sarah from Eteaket sent us over six different teas to experiment with and we duly did some overnight cold infusions in water. The smells and tastes from the infusions were stunning and following lots of tasting we narrowed it down to three potential teas. To make the final decision we did another round of cold infusions, this time a bit more scientifically in beer. Eventually we decided to use Eteaket’s Bollywood Dreams Chai and Blooming Marvelous tea blends to give the beers a completely different dimension.
Bollywood Dream Chai is an intense and spicy tea that is made with a blend of high quality black tea with aniseed, cinnamon, fiery ginger, black pepper, cloves and chicory root. The resulting beer, called Chai.P.A, has a powerful aroma of spices with a hint of liquorice and a flavour that takes on lots of the aromatic chai flavours.
The Blooming Marvellous blend is flavoured with Sencha green leaf, mallow and sunflower petals, rosebuds, vanilla and fresh tangy dried fruit. This blend has big fruity aroma with gives the beer, Blooming Brew, a uniquely sweet and fruity flavour.
All three beers; From The Ashes, Chai.P.A and Blooming Brew will be launched on Wednesday 7th of May in the fantastic Holyrood 9A in Edinburgh by Eteaket and the Fyne Ales team alongside five other Fyne Ales beers on cask and keg.
All three beers will of course be pouring at FyneFest.
