Origins Brewing – Nàdar Rhubarb – Now Available
Following on from the success of our Home series of spontaneous blends, we’re excited to launch a second series of Origins Brewing beers fermented only using our Glen Fyne microflora – Nàdar.
Inspired by Belgian lambic-style ales, each Nàdar release will have a base featuring a blend of spontaneously fermented beers, aged for a minimum of one year before augmenting with additions such as fruit or hops as we explore the how the stone-fruit character of our native microflora plays with different flavours.

The first beer in the Nàdar series, which takes its name from the Gaelic for ‘nature’, launches today on our online shop – Nàdar Rhubarb is a 6.3% blend of spontaneous beers each aged for a minimum of one year in oak before finishing on Scottish rhubarb for a further six months.
The addition of rhubarb has augmented the base beer’s gentle acidity and added a tiny hint of fruity bitterness to the complex flavour profile.
“We’ve kept the rhubarb character quite subtle with the first Nàdar blend because the fruit itself has quite a lot of tartness and we didn’t want to overwhelm the complexity of the base beer,” explains Head of Origins Brewing, Pawel Nowak. “I’m excited about the new series – we have been brewing a lot of spontaneous beer and it’s fun finding blends of vintages and additions to create unique beers with really interesting flavours.”

As part of the Nàdar series, Pawel used some of his time in lockdown to begin the Origins Brewing fruit farm project, using a corner of land behind the Glen Fyne farmhouse to begin growing a range of fruit for future Nàdar blends. It might not look like much right now, but stay tuned for future updates on our fruit farming adventures.
